Filet

Applewood Smoked Bacon Blue Cheese Butter

Method

Preparing the Filet

  1. 1

    Season the Filet

Sprinkle the center cut filet mignon with salt and black pepper on both sides.

  2. 2

    Sear the Filet

Heat olive oil in a skillet over medium-high heat. Once hot, add the filet mignon and sear for about 4-5 minutes on each side for medium-rare doneness.

  3. 3

    Rest the Filet

Remove the filet from the skillet and let it rest for 5 minutes before serving.

Making Maitre d' Herb Butter

  1. 4

    Prepare the Butter

In a bowl, mix together softened unsalted butter, chopped parsley, chives, minced garlic, and lemon juice until well combined.

  2. 5

    Chill the Butter

Transfer the mixture to a piece of plastic wrap, shape it into a log, and refrigerate until firm.

Making Applewood Smoked Bacon Blue Cheese Butter

  2. 7

    Chill the Butter

Transfer the mixture to a piece of plastic wrap, shape it into a log, and refrigerate until firm.

Making Garlic Mashed Potatoes

  1. 8

    Boil the Potatoes

In a large pot, add the cubed russet potatoes and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.

  2. 9

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add unsalted butter, minced garlic, milk, salt, and black pepper. Mash until smooth and creamy.

Preparing the Asparagus

  1. 10

    Season the Asparagus

Toss the trimmed asparagus spears with olive oil, salt, and black pepper in a bowl.

  2. 11

    Roast the Asparagus

Spread the asparagus on a baking sheet and roast in a preheated oven at 400°F (200°C) for about 15-20 minutes, until tender.
