Prepare the Catfish
Rinse the catfish filets under cold water and pat them dry with paper towels.

Soak in Buttermilk
Place the catfish filets in a bowl and pour the buttermilk over them. Ensure that the filets are fully submerged. Cover and refrigerate for at least 30 minutes to tenderize the fish and enhance flavor.
Breading and Frying

Prepare the Breading Mixture
In a large mixing bowl, combine the all-purpose flour, cornmeal, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Mix well to ensure an even distribution of spices.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small amount of the breading mixture into the oil; it should sizzle immediately.

Bread the Catfish
Remove the catfish filets from the buttermilk, allowing any excess to drip off. Dredge each filet in the breading mixture, pressing gently to adhere the coating. Shake off any excess breading.

Fry the Catfish
Carefully place the breaded catfish filets into the hot oil. Fry for about 3-4 minutes on each side or until golden brown and crispy. Avoid overcrowding the pan; fry in batches if necessary.

Once cooked, remove the catfish from the oil and place them on a plate lined with paper towels to drain excess oil. Serve hot with your choice of sides.
