Steak Preparation

    Prepare the Steak

    Remove the butcher's cut steak from the refrigerator and allow it to rest at room temperature for about 30 minutes before cooking. This helps in even cooking.

    Season the Steak

    Pat the steak dry with paper towels. Rub the olive oil all over the steak. Generously season both sides with kosher salt and black pepper. Press the seasoning into the meat for better adherence.

    Add Aromatics

    Smash the garlic cloves with the side of a knife and place them on top of the steak along with the fresh rosemary. This will infuse the steak with flavor as it cooks.

Cooking the Steak

    Preheat the Grill or Skillet

    Heat a grill or a cast-iron skillet over high heat until very hot, about 5-10 minutes. If using a skillet, add a little oil to coat the bottom.

    Cook the Steak

    Place the steak on the hot grill or skillet. Cook for about 4-5 minutes on one side without moving it to get a good sear. Flip the steak and cook for another 4-5 minutes for medium-rare, or until desired doneness is reached.

    Once cooked, remove the steak from the heat and transfer it to a cutting board. Tent it loosely with foil and let it rest for 5-10 minutes. This allows the juices to redistribute.

    Prepare Seasonal Vegetables

    While the steak is resting, wash and chop the seasonal vegetables. Toss them in olive oil, salt, and pepper, and roast in the oven at 400°F (200°C) for about 20-25 minutes or until tender.

    If using potatoes, peel and cut them into cubes. Boil in salted water until fork-tender, about 15-20 minutes. Drain and mash with butter, salt, and pepper, or roast them in the oven until crispy.
