Bourbon Apple Chutney

Preparing the Pork Chops

Preheat the Grill or Oven
Preheat your grill to medium-high heat or your oven to 375°F (190°C).

Cook the Pork Chops
Place the seasoned pork chops on the grill or in a baking dish if using the oven. Cook for about 6-7 minutes per side, or until the internal temperature reaches 145°F (63°C). Remove from heat and let rest for 5 minutes.
Making the Bourbon Apple Chutney

Sauté the Onions
In a large saucepan, heat a tablespoon of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes.

Combine Ingredients
Add the diced apples, brown sugar, apple cider vinegar, bourbon, cinnamon, allspice, and a pinch of salt to the saucepan. Stir well to combine.

Cook the Chutney
Bring the mixture to a boil, then reduce the heat to low and simmer for about 20-25 minutes, or until the apples are tender and the chutney has thickened. Stir occasionally.

Adjust Seasoning
Taste the chutney and adjust seasoning with additional salt if necessary. Remove from heat and let cool slightly.
Serving

Plate and Serve
Serve the bone-in pork chops on plates and generously top each chop with the bourbon apple chutney. Enjoy!
