Prepare the Avocado

Cut the ripe avocados in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until creamy but still slightly chunky. Season with salt, black pepper, and red pepper flakes to taste.

Toast the wheat bread slices in a toaster or on a skillet until golden brown and crispy.
Poach the Eggs

In a large pot, bring water to a gentle simmer and add white vinegar. Crack each egg into a small bowl and gently slide it into the water, one at a time. Poach for about 3-4 minutes until the whites are firm but the yolk is still runny. Remove with a slotted spoon and drain on paper towels.

Melt the unsalted butter in a saucepan and let it cool slightly. In a mixing bowl, whisk together egg yolks, lemon juice, and salt until pale and thick. Slowly drizzle in the melted butter while whisking continuously until the sauce is thick and creamy. Add a pinch of cayenne pepper for flavor.

Spread the smashed avocado evenly on the toasted wheat bread slices. Top each slice with a poached egg, drizzle with hollandaise sauce, and serve immediately with the optional sides of mixed greens and cherry tomatoes.
