    Cook the Bacon

    In a skillet over medium heat, cook the pepper bacon until crispy. Remove and set aside, leaving the bacon grease in the pan.

    Sauté the Onions

    In the same skillet, add sliced onions and brown sugar. Cook over medium heat until the onions are caramelized, about 5-7 minutes. Remove and set aside.

    Cook the Patty

    Form the ground beef or chicken into a patty. Season with salt and pepper. In the skillet, cook the patty for about 4-5 minutes on each side until fully cooked. Place a slice of cheese on top of the patty in the last minute of cooking to melt.

    Assemble the Patty Melt

    Spread butter on one side of each slice of sourdough bread. On the non-buttered side of one slice, layer the melted cheese patty, caramelized onions, and bacon. Top with the second slice of bread, buttered side facing out.

    Grill the Sandwich

    In the same skillet, grill the sandwich over medium heat until golden brown and crispy, about 3-4 minutes per side.

    Serve

    Remove from skillet, cut in half, and serve hot.
