Cider Preparation

Prepare the Apples

Wash and chop the fresh apples, removing the core and seeds. Place them in a large pot.

Make Apple Juice

Add water to the pot with chopped apples and bring to a simmer. Let it simmer for about 30 minutes, stirring occasionally.

Strain the Mixture

Once the mixture has simmered, strain the apple pulp through a fine mesh sieve or cheesecloth into a large bowl, extracting as much juice as possible.

Sweeten the Juice

Return the strained juice to the pot, add sugar, and stir until dissolved. Bring the mixture back to a simmer for about 10 minutes.

Add Cinnamon and Lemon Juice

Add the cinnamon sticks and lemon juice to the pot. Remove from heat and let cool to room temperature.

Fermentation Process

Once cooled, transfer the juice to a fermentation vessel. Sprinkle the yeast on top and seal with an airlock. Allow it to ferment in a dark, cool place for 1-2 weeks.

Bottling the Cider

After fermentation is complete, siphon the cider into bottles, leaving some space at the top. Seal the bottles and let them carbonate for an additional 1-2 weeks.

Chill and Serve

Once carbonated, chill the cider in the refrigerator and serve cold.
