Pasta and Sauce

Method

Preparation

1

Cook the Linguine

In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Drain and set aside.

2

Prepare the Sauce

In a large skillet, heat a couple of tablespoons of olive oil over medium heat. Add the minced roasted garlic and sauté for about 1 minute until fragrant.

3

Add Anchovies

Add the anchovy fillets to the skillet and cook, stirring, until they dissolve into the oil.

4

Incorporate Tomatoes and Olives

Stir in the crushed tomatoes, Kalamata olives, and capers. Allow the sauce to simmer for about 10 minutes, stirring occasionally.

5

Cook the Shrimp

In another skillet, heat a bit of olive oil over medium-high heat. Add the shrimp, season with salt and pepper, and cook until pink and opaque, about 5 minutes.

6

Combine and Serve

Add the cooked shrimp to the sauce, then toss with the drained linguine. Stir in the fresh herbs and adjust seasoning as needed. Serve hot, topped with grated Parmesan cheese.
