1. Prepare the Noodles

Soak the rice vermicelli noodles in hot water for about 10 minutes or until tender. Drain and set aside.

2. Cook the Chicken

In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the sliced chicken breast and cook until browned and cooked through, about 5-7 minutes.

3. Make the Sauce

In a bowl, mix together peanut butter, soy sauce, fish sauce, brown sugar, chili paste, and lime juice until smooth.
