Method

Pork Preparation

  1. 1

    Marinate the Pork

In a large bowl, combine the orange juice, pineapple juice, minced garlic, oregano, cumin, chili powder, salt, black pepper, and bay leaf. Mix well.

  2. 2

    Add Pork

Add the pork shoulder to the marinade, ensuring it is fully coated. Cover and refrigerate for at least 4 hours, or overnight for best flavor.

Cooking the Pork

  1. 3

    Slow Cook the Pork

Transfer the marinated pork to a slow cooker. Cook on low for 8 hours or until the pork is tender and easily shredded.

  2. 4

    Shred the Pork

Once cooked, remove the pork from the slow cooker and shred it with two forks. Discard any excess fat and the bay leaf.

Taco Assembly

  1. 5

    Prepare the Toppings

Finely chop the onion and cilantro. Slice the avocado and cut the limes into wedges.

  2. 6

    Warm Tortillas

In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side or until pliable.

  3. 7

    Assemble the Tacos

Place a generous amount of shredded pork on each tortilla. Top with chopped onion, cilantro, avocado slices, and a drizzle of salsa. Squeeze fresh lime juice over the top.
