Preparing the Marinara Sauce

Cook the Marinara Sauce
In a medium saucepan, heat the olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in crushed tomatoes, oregano, basil, salt, black pepper, and sugar. Bring to a simmer and reduce heat to low. Let simmer for about 20 minutes, stirring occasionally.

Prepare the Calamari
In a bowl, combine flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.

Soak the Calamari
Dip the calamari rings into the buttermilk, allowing excess to drip off, then dredge them in the flour mixture, ensuring they are well coated. Set aside on a plate.

Heat the Oil
In a large, deep pot, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small amount of the flour mixture; it should sizzle.

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, frying for about 2-3 minutes or until golden brown and crispy. Do not overcrowd the pot.

Drain the Calamari
Using a slotted spoon, remove the fried calamari and transfer to a plate lined with paper towels to drain excess oil.
