Prepare the Oven and Pans
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large bowl, sift together the flour, sugar, cocoa powder, baking soda, and salt.

Combine Wet Ingredients
In another bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar.

Combine Mixtures
Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

Bake the Cake
Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Cool the Cake
Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.

Prepare Cream Cheese Icing
In a large bowl, beat the cream cheese and butter together until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.

Frost the Cake
Once the cakes are completely cool, place one layer on a serving plate and spread a layer of cream cheese icing on top. Place the second layer on top and frost the top and sides of the cake.
