1. Prepare the Dough
In a large bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until frothy. Add salt and gradually mix in flour until a dough forms.
2. Knead the Dough
Turn the dough onto a floured surface and knead for about 5 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 hour.
3. Shape the Pretzels
Preheat the oven to 450°F (230°C). Once risen, divide the dough into 12 equal pieces. Roll each piece into a long rope and shape into a pretzel. Place on a lined baking sheet.
4. Baking Soda Bath
In a large pot, bring 10 cups of water to boil and add baking soda. Boil each pretzel for 30 seconds, then remove with a slotted spoon and place back on the baking sheet.
