    Prepare the Steak

    Season the strip steak with salt and black pepper on both sides. Heat 1 tablespoon of olive oil in a skillet over medium-high heat and sear the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let it rest.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onions and cook until translucent, about 3-4 minutes. Then add the mushrooms and cook for an additional 3-4 minutes until they are browned. Finally, add the roasted red peppers and sauté for another 2 minutes.

    Assemble the Sandwich

    Slice the rested steak into thin strips. Cut the hoagie roll open and layer the sliced steak, sautéed vegetables, and provolone cheese inside the roll.

    Melt the Cheese

    Optionally, you can place the assembled sandwich under a broiler for 1-2 minutes to melt the provolone cheese.
