    Cook the Linguini

    Bring a large pot of salted water to a boil. Add the linguini and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced mushrooms and cook until they are soft, about 3-4 minutes. Add the artichoke hearts and spinach, cooking until the spinach wilts, about 2-3 minutes.

    Prepare the Garlic White Wine Sauce

    Add 3 cloves of minced garlic to the skillet with the vegetables and cook for an additional minute. Pour in 1/2 cup of white wine and let it simmer for about 5 minutes until it reduces slightly.

    Cook the Scallops

    In a separate pan, heat 1 tablespoon of olive oil over medium-high heat. Season the scallops with salt and pepper. Sear the scallops for about 2-3 minutes on each side until they are golden brown and cooked through.

    Combine and Serve

    Add the cooked linguini to the skillet with the vegetables and sauce, tossing to combine. Gently fold in the seared scallops. Serve immediately, garnished with freshly chopped parsley if desired.
