    Prepare the Potatoes

    Wash and peel the potatoes. Using a mandoline slicer, slice the potatoes thinly (about 1/16 inch thick).

    Soak the Potatoes

    Place the sliced potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove as much moisture as possible.

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Chips

    Carefully add a handful of potato slices to the hot oil, ensuring not to overcrowd the pot. Fry until golden brown and crispy, about 3-5 minutes.

    Drain and Season

    Using a slotted spoon, remove the chips from the oil and place them on paper towels to drain. While they are still hot, sprinkle with sea salt, black pepper, paprika, garlic powder, and onion powder to taste.
