Prepare the Pulled Pork
In a slow cooker, place the pork shoulder. Season with salt and black pepper. Add 1 cup of water and cover the slow cooker. Cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once the pork is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix in the barbecue sauce. Let it cook for an additional 30 minutes.

Prepare the Coleslaw
In a bowl, mix the coleslaw mix with mayonnaise. Adjust seasoning with salt and pepper if necessary.

Assemble the Sandwich
On each toasted roll, layer the pulled pork, followed by a generous amount of shredded cheddar cheese, a scoop of coleslaw, and a handful of fried onions. Top with the other half of the roll.
