    Prepare the Fries

    Peel and cut the russet potatoes into thick fries. Rinse under cold water and pat dry with a paper towel.

    Make the Batter

    In a large bowl, combine the flour, cornstarch, baking powder, and salt. Gradually whisk in the cold water until smooth.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Dip the potato fries into the batter, allowing excess to drip off, then carefully place them in the hot oil. Fry in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

    Assemble the Poutine

    Place a generous amount of the battered fries on a serving plate. Top with cheese curds and pour hot gravy over the top to melt the curds.
