Directions for Potato Skins

    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Scrub the russet potatoes under running water and dry them with a paper towel. Prick each potato several times with a fork.

    Bake the Potatoes

    Place the potatoes directly on the oven rack and bake for about 45-60 minutes until the skins are crispy and the insides are tender. Remove from the oven and let cool slightly.

    Scoop the Potatoes

    Once the potatoes are cool enough to handle, cut each potato in half lengthwise. Scoop out most of the flesh, leaving about 1/4 inch of potato on the skin.

    Season and Oil

    Brush the potato skins with olive oil and season with salt and black pepper.

    Add Fillings

    Place the potato skins on a baking sheet. Fill each skin with shredded cheese and bacon bits.

    Bake Again

    Return the filled potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Serve

    Remove from the oven and let cool for a few minutes. Top with sour cream and chopped green onions before serving.
