Prepare the Ingredients
Slice the onion, bell pepper, and mushrooms. Cut the chicken breast into thin strips.

Cook the Chicken
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken strips, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onion, bell pepper, and mushrooms. Sauté until the vegetables are tender, about 5-6 minutes.

Combine and Add Cheese
Return the cooked chicken to the skillet with the vegetables. Stir to combine and let cook for an additional 2 minutes. Top with provolone cheese slices and cover the skillet until the cheese melts.

Serve hot on a roll or over rice, if desired.
