Prepare the Onions
Peel and slice the onions into 1/4-inch thick rings. Separate the rings and set them aside.

Make the Batter
In a large bowl, mix together the flour, cornstarch, baking powder, salt, black pepper, and paprika. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 375°F (190°C).

Coat and Fry
Dip each onion ring into the batter, allowing excess to drip off, then carefully place them in the hot oil. Fry in batches for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
