1. Roasting the Turkey
Preheat your oven to 350°F (175°C). Rub the turkey breast with olive oil and Cajun seasoning. Place it in a roasting pan and roast for about 1 hour or until the internal temperature reaches 165°F (75°C). Let it rest for 10 minutes before slicing.
2. Preparing the Vegetables
While the turkey is roasting, slice the jalapeño pepper, tomato, onion, and wash the lettuce. Set them aside.
3. Assembling the Sandwich
Slice the rolls in half. Spread a generous amount of chipotle mayonnaise on the inside of each roll. Layer the sliced turkey breast, jalapeño, cheddar cheese, lettuce, tomato, and onion on the bottom half of the roll. Place the top half of the roll on and press down gently.
4. Serving
Serve the Cajun turkey sandwiches immediately, or wrap them in foil and keep warm until serving.
