    Cook the Tortellini

    In a large pot of boiling salted water, cook the tortellini according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables

    In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped red onion and sauté until translucent, about 3-4 minutes. Stir in the artichoke hearts and tomatoes, cooking for an additional 2-3 minutes.

    Cook the Seafood

    Add the shrimp, scallops, and clams to the skillet. Cook until the shrimp is pink and the scallops are opaque, about 5-7 minutes. Stir occasionally to ensure even cooking.

    Make the Cajun Cream Sauce

    Pour in the Cajun cream sauce and bring to a gentle simmer. Allow the sauce to thicken slightly, about 2-3 minutes. If the sauce is too thick, add a splash of water or broth.

    Add the cooked tortellini to the skillet, tossing to coat in the sauce. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley if desired.
