Preparation and Assembly

Prepare the Beef Roast
Preheat your oven to 325°F (163°C). Rub the top round beef roast with salt, black pepper, garlic powder, and onion powder. Place the roast on a rack in a roasting pan.

Roasting
Roast the beef in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare. Remove from the oven and let it rest for 15-20 minutes before slicing.

Prepare the Rolls
If using kimmelweck rolls, sprinkle the tops with coarse sea salt and caraway seeds before baking them according to package instructions or until golden brown.

Slice the Beef
Thinly slice the rested beef against the grain.

Assemble the Sandwiches
Place a generous amount of sliced beef on the fresh rolls. Serve with warm au jus for dipping.
