    Cook the Rice

    In a medium pot, bring 4 cups of water to a boil. Add 2 cups of rice and a pinch of salt. Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender. Fluff with a fork and set aside.

    Prepare the Chicken

    While the rice is cooking, season 1 lb of chicken breast with salt, black pepper, garlic powder, and paprika. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chicken and cook for 5-7 minutes on each side, until fully cooked and golden brown. Remove from skillet and let rest before slicing.

    Sauté the Vegetables

    In the same skillet, add chopped bell pepper, onion, and broccoli. Sauté for 5-7 minutes until vegetables are tender. Add soy sauce and honey, stirring to combine.

    Combine and Serve

    In a large serving bowl, layer the cooked rice, sliced chicken, and sautéed vegetables. Drizzle any remaining sauce from the skillet over the top. Serve immediately.
