Preparation of Ingredients

    Prepare the Noodles

    Bring a pot of water to a boil. Add the rice vermicelli noodles and cook for about 3-5 minutes until tender. Drain and rinse under cold water to stop cooking. Set aside.

    Prepare the Shrimp

    Peel and devein the shrimp. In a skillet, heat a little oil over medium heat, add the shrimp, and cook for about 3-4 minutes until pink and cooked through. Set aside.

    Prepare the Vegetables

    Wash and dry the lettuce leaves. Slice the cucumber and carrots into thin strips or julienne. Chop the fresh mint and cilantro. Set all prepared vegetables aside.

    Chop the peanuts coarsely and set aside for garnish.

Making the Dipping Sauce

    In a small bowl, combine fish sauce, lime juice, sugar, minced garlic, and chopped chili pepper. Stir until the sugar is dissolved. Adjust seasoning to taste.

Assembling the Dish

    On a large platter, arrange the cooked rice vermicelli noodles, cooked shrimp, lettuce leaves, sliced cucumber, carrots, mint, and cilantro. Serve with the dipping sauce on the side and sprinkle with chopped peanuts.
