Preparation of Chicken or Tofu

Cook the Chicken
In a large pot, add enough water to cover the chicken breasts. Bring to a boil, add chicken, and cook for about 15-20 minutes until cooked through. Remove from water, let cool slightly, and shred with two forks.

Prepare the Tofu (if using)
If using fried tofu, cut it into bite-sized cubes. Set aside.
Making the Sauce

Combine Sauce Ingredients
In a medium saucepan over medium heat, combine the red curry paste, coconut milk, soy sauce, fish sauce, lime juice, chili flakes, and sugar. Stir well and bring to a simmer.

Add Vegetables
Once the sauce is simmering, add the red bell pepper, carrot, and green onions to the saucepan. Cook for about 5-7 minutes until the vegetables are tender but still crisp.

Serve the spicy Thai chicken in bowls, garnished with lime wedges and crushed peanuts on top.
