    Marinate the Chicken

    In a bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Add the boneless chicken breasts and coat them well. Let them marinate for at least 30 minutes.

    Prepare the Vegetables

    Wash and chop the mixed vegetables if not pre-chopped. Set aside.

    Cook the Rice

    In a medium saucepan, bring 2 cups of chicken broth to a boil. Add 1 cup of rice, reduce heat to low, cover, and simmer for about 18-20 minutes or until rice is tender and liquid is absorbed.

    Cook the Chicken

    Heat a grill pan or skillet over medium-high heat. Add the marinated chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).

    Sauté the Vegetables

    In a separate pan, add a bit of olive oil and sauté the mixed vegetables over medium heat for about 5-7 minutes until they are tender but still crisp.

    Combine and Serve

    Once the chicken is cooked and the rice is ready, fluff the rice with a fork. Serve the rice topped with sautéed vegetables and sliced grilled chicken on top. Garnish with fresh parsley and lemon wedges if desired.
