Preparation of Grains

    Cook Quinoa

    Rinse the quinoa under cold water to remove bitterness. In a medium saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low and cover. Simmer for about 15 minutes or until the quinoa is fluffy and water is absorbed. Remove from heat and let it sit for 5 minutes.

    Prepare Vegetables

    Chop the cherry tomatoes in halves, dice the cucumber, finely chop the red onion, and dice the bell pepper. Add the chopped vegetables to a large mixing bowl.

    Add Olives

    Slice the Kalamata olives in half and add them to the mixing bowl with the chopped vegetables.

Mixing Dressing

    Prepare Dressing

    In a small bowl, whisk together 3 tablespoons of olive oil and 2 tablespoons of lemon juice. Season with salt, black pepper, and dried oregano.

Combining Ingredients

    Combine Everything

    Once the quinoa has cooled slightly, add it to the bowl with the vegetables. Pour the prepared dressing over the mixture, and toss gently to combine all ingredients.

    Add Fresh Herbs and Optional Ingredients

    Chop the fresh parsley and add it to the salad. If using, add the feta cheese and artichoke hearts. Toss again to combine.
