Method

Prep Vegetables

  1. 1

    Prepare Napa Cabbage

Cut the Napa cabbage in half lengthwise, then slice it into 1-inch pieces. Rinse it under cold water to remove any dirt.

  2. 2

    Slice Carrots

Peel and julienne the carrots into thin strips.

  3. 3

    Chop Green Onions

Chop the green onions into thin slices, separating the white and green parts.

  4. 4

    Mince Garlic and Ginger

Mince the garlic cloves and ginger finely and set aside.

Make Sauce

  1. 5

    Combine Sauce Ingredients

In a bowl, mix the Korean red pepper flakes, soy sauce, sugar, sesame oil, and fish sauce until well combined.

Combine and Season

  1. 6

    Mix Vegetables and Sauce

In a large mixing bowl, combine the chopped Napa cabbage, carrots, green onions (white parts), minced garlic, and ginger. Pour the sauce over the vegetable mixture.

  2. 7

    Season

Add salt and black pepper to the mixture and toss everything together until evenly coated with the sauce.

Fermentation

  1. 8

    Ferment

Transfer the mixture to a clean glass jar, pressing it down to remove air bubbles. Leave about an inch of space at the top of the jar. Seal the jar and let it sit at room temperature for 2 to 5 days, depending on your desired level of fermentation.
