Prepare the Marinade
In a food processor or blender, combine the lemongrass (white parts only), garlic, shallots, fish sauce, soy sauce, brown sugar, black pepper, and vegetable oil. Blend until smooth.

Marinate the Pork
In a large mixing bowl, place the pork shoulder or pork belly. Pour the marinade over the pork, ensuring it's well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Preheat the Grill
Preheat your grill to medium-high heat (about 200-230°C or 400-450°F).

Rest the Pork
Once grilled, remove the pork from the grill and let it rest for about 5 minutes before slicing. This helps retain the juices.

Slice the pork into thin strips and serve warm with rice, fresh herbs, or pickled vegetables.
