    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Boil them in salted water until tender, about 10-15 minutes. Drain and set aside.

    Make the Sausage Gravy

    In a skillet over medium heat, cook the ground sausage until browned. Remove excess grease, leaving about a tablespoon in the pan. Sprinkle flour over the sausage, stirring for a minute. Gradually add the milk, stirring constantly until the gravy thickens. Season with salt and pepper.

    Cook the Eggs

    In a separate pan, crack the eggs and cook them to your preference (scrambled, fried, or poached). Season with salt and pepper.

    Bake the Biscuit

    Preheat the oven to 450°F (230°C). In a mixing bowl, combine flour, baking powder, sugar, and salt. Cut in butter until the mixture resembles coarse crumbs. Add buttermilk and stir until just combined. Roll out and cut into circles. Bake for about 10-12 minutes until golden brown.
