Prepare the Chicken
After 24 hours, remove the chicken from the brine and rinse under cold water. Pat dry with paper towels.
Marinate in Buttermilk
Place the chicken pieces in a large bowl and cover with buttermilk. Let it marinate for at least 1 hour.
Prepare the Coating
In a large bowl, combine flour, paprika, garlic powder, onion powder, black pepper, cayenne pepper, and salt. Mix well.
Coat the Chicken
Remove chicken from buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring an even coating.
Heat the Oil
In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).
Fry the Chicken
Carefully add chicken pieces to the hot oil, frying in batches to avoid overcrowding. Fry for about 12-15 minutes, or until golden brown and cooked through.
Drain and Serve
