Method
For the Fried Chicken
- 1
Prepare the Chicken
In a bowl, combine buttermilk, cayenne pepper, paprika, garlic powder, salt, and black pepper. Add the chicken breasts and ensure they are fully submerged. Cover and refrigerate for at least 2 hours or overnight.
- 2
Dredge the Chicken
In a shallow dish, mix together flour, cayenne pepper, paprika, salt, and black pepper. Remove the chicken from the buttermilk, allowing excess to drip off, and dredge in the flour mixture until fully coated.
- 3
Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the chicken breasts. Fry for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
For the Spicy Mayo
- 4
Make the Spicy Mayo
In a small bowl, combine mayonnaise, Sriracha sauce, and lemon juice. Mix well until smooth. Adjust seasoning to taste.
For the Slaw
- 5
Prepare the Slaw
In a large bowl, shred the green cabbage and grate the carrot. Add apple cider vinegar, sugar, salt, and black pepper. Toss well to combine and let sit for at least 10 minutes to allow flavors to meld.

Assemble the Sandwich
Slice the brioche buns in half. Spread a generous amount of spicy mayo on the bottom half. Place the fried chicken on top, followed by a pile of slaw and pickles. Top with the other half of the bun, serve immediately.
