Prepare the Dough
In a large mixing bowl, dissolve the sugar and yeast in warm water. Let it sit for about 5 minutes until frothy. Gradually add in the flour and salt, mixing until a dough forms.

Knead the Dough
Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place it in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour.

Shape the Pretzel Bites
Preheat your oven to 425°F (220°C). Once the dough has risen, punch it down and divide it into small pieces. Roll each piece into a rope and cut into bite-sized pieces.

Boil the Bites
In a large pot, bring 10 cups of water to a boil and add the baking soda. Carefully drop the pretzel bites into the boiling water for about 30 seconds, then remove and place on a baking sheet lined with parchment paper.
