Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually add the cold sparkling water while whisking until smooth. Let the batter rest for about 15 minutes.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Fish
Pat the fish fillets dry with paper towels. Dip each fillet into the batter, ensuring it is well coated.

Fry the Fish
Carefully place the battered fish fillets into the hot oil. Fry for about 5-7 minutes, or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Potatoes
Peel and cut the russet potatoes into thin fries. Rinse them in cold water to remove excess starch and pat dry.

In a separate pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fries
Carefully add the cut potatoes to the hot oil in batches. Fry for about 4-5 minutes, or until they are golden and crispy. Remove and drain on paper towels, then sprinkle with salt.
Tartar Sauce

Mix the Ingredients
In a bowl, combine mayonnaise, finely chopped pickles, capers, lemon juice, and Dijon mustard. Stir until well mixed.

Add salt and black pepper to taste. Adjust seasoning as needed.
