Cake Batter
For Greasing
Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 425°F (220°C). This will ensure that your lava cakes bake evenly.
- 2
Prepare the Ramekins
Grease four ramekins with 1 tablespoon of unsalted butter. Dust the insides with cocoa powder to prevent sticking.
Making the Batter
- 3
Melt Chocolate and Butter
In a microwave-safe bowl, combine 200g of dark chocolate and 100g of unsalted butter. Microwave in 30-second intervals, stirring after each, until fully melted and smooth.
- 4
Mix Sugar and Eggs
In a mixing bowl, whisk together 150g of granulated sugar, 2 whole eggs, and 2 egg yolks until the mixture is pale and slightly thickened.
- 5
- 6
Add Flour
Sift in 50g of all-purpose flour and gently fold into the batter until just combined. Do not overmix.
Baking
- 7
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
- 8
Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.
- 9
Cool Slightly
Remove the ramekins from the oven and let them cool for 1-2 minutes. This allows the lava center to set slightly, making them easier to unmold.
