Prepare the Topping

Chop the Tomatoes
Dice the ripe tomatoes into small cubes and place them in a mixing bowl.

Add Basil
Chop the fresh basil leaves finely and add them to the bowl with the tomatoes.

Incorporate Mozzarella
Cut the fresh mozzarella cheese into small cubes and add to the tomato and basil mixture.

Add Garlic, Oil, and Vinegar
Mince the garlic cloves and add them to the bowl. Pour in the extra-virgin olive oil and balsamic vinegar, then season with salt and black pepper to taste.

Mix Well
Gently mix all the ingredients in the bowl until well combined. Set aside to marinate while you prepare the bread.
Toast the Bread

Prepare the Baguette
Slice the baguette or Italian bread into 1/2 inch thick slices.

Toast the Bread
Heat a grill pan or a broiler. Toast the bread slices until golden brown and crispy, about 2-3 minutes per side.

Rub with Garlic
Once toasted, rub one side of each slice with the whole garlic clove for added flavor.
Assemble the Bruschetta

Top the Bread
Spoon the tomato and mozzarella mixture generously onto the toasted side of each bread slice.

Serve the bruschetta immediately while the bread is warm, garnished with additional basil if desired.
