Prepare the Beer Batter

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Whisk together until well blended.

    Add Wet Ingredients

    Slowly pour in the lager beer and cold water while whisking the mixture until smooth. The batter should be thick but pourable. Let it rest for about 15 minutes.

Prepare the Fish

    Season the Fish

    Pat the fish fillets dry with paper towels. Season both sides with salt and black pepper.

    Heat the Oil

    In a deep frying pan or large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Fry the Fish

    Batter and Fry

    Dip each fish fillet into the beer batter, allowing excess to drip off. Carefully place the battered fish into the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes or until golden brown and crispy.
