    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips to create fries.

    Soak the Fries

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Drain the fries and pat them dry with paper towels. Fry them in batches in the hot oil until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

    Season the Fries

    While the fries are still hot, drizzle with truffle oil and sprinkle with salt, black pepper, and grated Parmesan cheese. Toss gently to coat.

    Prepare Garlic Aioli

    Serve the fries with garlic aioli for dipping. (Combine 1 cup mayonnaise, 2 minced garlic cloves, 1 tbs lemon juice, and salt to taste in a bowl.)
