    Prepare the Vegetables

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced onions and cook until caramelized, about 10-15 minutes. Add sliced mushrooms and red bell pepper, cooking until softened, about 5-7 minutes. Season with salt and pepper, then set aside.

    Cook the Steak

    In the same skillet, add the remaining tablespoon of olive oil. Increase heat to medium-high and add the chopped steak. Cook until browned and cooked to your desired doneness, about 5-7 minutes. Mix in the cooked vegetables and stir to combine.

    Assemble the Melt

    Preheat a grill pan or skillet over medium heat. Spread creamy horseradish sauce on one side of each slice of sourdough bread. Place half of the steak mixture on the sauce side of two slices, then top with shredded Gran Cru cheese. Place the other two slices of bread on top, sauce side down.

    Grill the Sandwiches

    Grill the sandwiches in the preheated skillet or grill pan for about 3-4 minutes on each side, or until the bread is toasted and the cheese is melted.

    Remove from heat, slice in half, and serve immediately.
