    Prepare the Steak

    Season the hanger steak generously with salt and black pepper. Let it sit at room temperature for about 30 minutes.

    Caramelize the Onions

    Slice the onion into thin strips. Heat olive oil in a skillet over medium heat, add the onion, and cook slowly until caramelized, about 15-20 minutes. Stir occasionally to prevent burning.

    Grill the Steak

    Preheat your grill to high heat. Grill the hanger steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let the steak rest for 5-10 minutes before slicing.

    While the steak is resting, brush the sourdough slices with olive oil and grill them for about 2 minutes on each side until toasted.

    Slice the steak against the grain into thin strips. On a large board or platter, arrange the sliced steak, caramelized onions, crumbled Maytag blue cheese, whole grain mustard, creamy horseradish, and chimichurri sauce. Serve with the grilled sourdough.
