Burger Preparation

    Prepare the Patties

    In a bowl, season the ground beef with salt and pepper. Form into 4 equal patties. Make a slight indentation in the center of each patty to prevent puffing during cooking.

    Cook the Patties

    Heat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes per side, or until they reach your desired doneness. Place a slice of cheddar cheese on each patty during the last minute of cooking to melt.

    Toast the Buns

    While the patties are cooking, lightly toast the egg buns on the grill or in a toaster until golden brown.

    Assemble the Burgers

    Spread a generous amount of smokestack mayo on the bottom half of each toasted bun. Add the cooked patty with melted cheddar, then layer on shredded lettuce, house-made pickles, pickled onions, and fried onion straws. Top with the other half of the bun.
