    Prepare Bok Choy

    Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cut bok choy in half lengthwise and season with salt and black pepper. Place cut side down in the skillet and sear for about 3-4 minutes until charred and tender. Remove from heat and set aside.

    Cook Scallops

    In the same skillet, add another tablespoon of olive oil. Season the scallops with salt and black pepper. Place scallops in the skillet, ensuring they are not touching each other. Sear for 2-3 minutes on each side until golden brown and opaque in the center. Remove from heat.

    Prepare Coconut Cream Sauce

    In a small saucepan, gently heat the coconut cream over low heat until warm. Stir in a tablespoon of chili crisp and mix well. Adjust seasoning with salt if needed.

    Plate the Dish

    On each plate, arrange the charred bok choy, place the seared scallops on top, and drizzle with coconut cream sauce. Garnish with sliced jalapeño, pickled kumquat, and an extra drizzle of chili crisp.
