    Make the Ravioli Dough

    In a mixing bowl, combine flour and salt. Create a well in the center, add eggs, and gradually mix in flour until a dough forms. Knead the dough for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    Blanch spinach in boiling water for 1-2 minutes. Drain and chop finely. In a bowl, mix spinach, ricotta, and a pinch of salt. Set aside.

    Roll Out the Dough

    Divide dough into quarters. Roll out each quarter into thin sheets using a pasta machine or rolling pin.

    Fill the Ravioli

    Place small spoonfuls of the filling on one sheet of dough, then cover with another sheet. Press around the filling to seal and cut into individual ravioli.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Cook ravioli for 3-4 minutes until they float. Remove and set aside.

    Make the Parmesan Cream Sauce

    In a saucepan, melt butter over medium heat. Add minced garlic and sauté for 1 minute. Pour in heavy cream, bring to a simmer, then stir in parmesan cheese and black pepper until melted and smooth.

    Prepare the Pesto

    In a food processor, combine basil, pine nuts, parmesan, olive oil, and garlic. Blend until smooth. Adjust seasoning as needed.

    Make the Gremolata

    Mix parsley, lemon zest, and parmesan in a bowl. Set aside.

    Assemble the Dish

    On a plate, swirl some pesto, layer ravioli on top, drizzle with parmesan cream sauce, and sprinkle with gremolata and toasted pine nuts.
