    In a bowl, mix soy sauce, grated ginger, and salt. Add the pork belly and marinate for at least 2 hours, preferably overnight.

    In a small saucepan, heat rice vinegar and sugar until dissolved. Pour over the julienned carrots and let sit for at least 30 minutes.

    In a bowl, mix mayonnaise with lime juice. Set aside.
