Method

Preparation

  1. 1

    Prepare the Potatoes

Preheat the oven to 400°F (200°C). Slice the Yukon Gold potatoes into a hasselback style, making thin cuts about 1/8 inch apart, but not cutting all the way through. Place them on a baking sheet.

  2. 2

    Season the Potatoes

Melt 2 tablespoons of butter and mix with minced garlic, thyme, rosemary, salt, and pepper. Brush this mixture over the potatoes, ensuring it seeps into the cuts.

  3. 3

    Bake the Potatoes

Bake the potatoes in the preheated oven for 30-35 minutes or until golden and crispy on the outside and tender on the inside.

Cooking the Ribeye

  1. 4

    Prepare the Grill or Pan

Preheat your grill or a cast-iron skillet over medium-high heat. Season the ribeye with salt and black pepper on both sides.

  2. 5

    Cook the Ribeye

Cook the ribeye for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness. Let it rest for 5 minutes before slicing.

Grilling the Broccolini

  1. 6

    Grill the Broccolini

Toss the broccolini with 1 tablespoon of olive oil, salt, and pepper. Grill for about 4-5 minutes until tender and slightly charred.

Herb Butter

  1. 7

    Prepare Herb Butter

In a small bowl, mix the remaining 2 tablespoons of butter with minced garlic, chopped thyme, and rosemary. Set aside.

Serving

  1. 8

    Plate the Dish

Serve the ribeye steak alongside the garlic-herb hasselback potatoes and grilled broccolini. Top the steak with the herb butter and enjoy!
