Filet and Truffle Mac and Cheese

Method

Preparation and Cooking

  1. 1

    Cooking the Filet

Season the Creekstone filet mignon with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the filet for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes.

  2. 2

Making the Truffle Mac and Cheese

In a large pot, bring salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

  3. 3

    Preparing the Cheese Sauce

In the same pot, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until golden. Gradually whisk in the milk, stirring constantly until the mixture thickens.

  4. 4

    Combining Ingredients

Remove from heat and stir in the cheddar cheese until melted. Add the truffle oil and cooked macaroni, mixing well to combine.

  5. 5

    Baking the Mac and Cheese

Preheat the oven to 350°F (175°C). Transfer the mac and cheese mixture to a baking dish. In a small bowl, mix the breadcrumbs and Parmesan cheese, then sprinkle over the top of the mac and cheese. Bake for 20-25 minutes until golden and bubbly.
