Prepare the Poached Eggs
In a medium pot, bring water to a gentle simmer. Add a splash of vinegar to the water. Crack each egg into a small bowl and gently slide it into the simmering water. Poach the eggs for about 3-4 minutes or until the whites are set but the yolks remain runny. Remove with a slotted spoon and set aside.

Heat the Ham
In a skillet over medium heat, warm the shaved applewood smoked ham for about 2-3 minutes until heated through.

Plate the Dish
On a serving plate, layer the warm ham. Carefully place a poached egg on top of the ham.

Add Hollandaise Sauce
Generously drizzle hollandaise sauce over the poached egg and ham. Season with salt and black pepper to taste.

Garnish and Serve
Garnish with fresh parsley and serve immediately.
