Directions

  1. 1

    Prepare the Mushrooms

Clean the Myer's mushrooms thoroughly and remove the stems. Set aside.

  2. 2

    Make the Batter

In a bowl, combine flour, salt, and black pepper. In another bowl, beat the eggs. Prepare breadcrumbs in a third bowl.

  3. 3

    Stuff the Mushrooms

Take each mushroom cap and fill it with a spoonful of spinach-artichoke dip. Ensure the dip is packed in well.

  4. 4

    Coat the Mushrooms

Dip each stuffed mushroom first in the flour mixture, then in the beaten eggs, and finally coat it with breadcrumbs.

  5. 5

    Fry the Mushrooms

In a large pan, heat vegetable oil over medium-high heat. Once hot, carefully add the coated mushrooms. Fry until golden brown, about 3-4 minutes on each side.

  6. 6

    Add Parmesan

Once fried, remove the mushrooms and place them on a paper towel to drain excess oil. While still hot, sprinkle grated Parmesan cheese over the top.

  7. 7

    Serve

Serve the chicken fried mushrooms hot as an appetizer or snack.
